Boiling is a method of cooking food by immersing it in a liquid maintained at or near its boiling point (~100°C at sea level). Heat causes protein denaturation, starchgelatinization, cell-wall softening, and dissolution or leaching of water-soluble compounds. Because the food is surrounded by water, surface temperatures generally remain too low for extensive Maillard reaction browning.
