A drupe has three main parts:
- A thin outer skin (exocarp)
- A fleshy middle (mesocarp), which is the part we usually eat
- A hard inner "stone" or pit (endocarp) that encloses the seed
Drupes are also known as
Stone Fruit, though drupes such as mango, olive and coconut aren't usually referred to as stone fruit in culinary terms.
