Frying is a method of cooking food in hot fat or oil, typically at approximately 150–190°C. Heat is transferred efficiently from the oil to the food, causing rapid surface dehydration, crust formation,
maillard reactions, and sometimes
caramelization. Oil may also be absorbed into the food, while fats can undergo
oxidation and thermal degradation during prolonged or high-temperature frying.
