Gelatinization is the process that occurs when
starch is heated in the presence of water whereby its granules absorb water, swell, and lose their crystalline structure. Gelatinization makes the starch more accessible and changes the texture.
For example, gelatinization occurs when flour is used to thicken a sauce.
