Non-climacteric fruit does not ripen after harvest. Prematurely harvested non-climacteric fruit can, in time, break down, soften and even change in colour but it will not be as
quality-rich as
ripe-harvested fruit.
Climacteric fruits, on the other hand, can ripen after harvest.
