Steaming is a method of cooking food using water vapor (steam) rather than directly immersing it in water. Condensation of steam on the cooler food surface releases substantial heat, causing proteindenaturation, starchgelatinization, and softening of plant tissues while generally minimizing the leaching of water-soluble nutrients and compounds.
