A trans fatty acid is an unsaturated fatty acid containing at least one trans-configured double bond. Industrial trans fats can be formed during partial hydrogenatation of oils. High intake is associated with increased LDL cholesterol, decreased HDL cholesterol, and increased cardiovascular disease risk.
