An overt fat is a dietary categorization that includes the culinary fruits, culinary vegetables, culinary nuts and culinary seeds whose dominant calorie is fat. An overt fat provides more calories from fat than it does from either carbohydrate or protein.
For example:
Avocado is an overt fat because it has about 75-85% of calories from fat, depending on the avocado variety
Durian is NOT an overt fat because only about 25-33% of its total calories come from fat, with carbohydrate providing 60-73% of its total calories, depending on the durian variety
Hemp Seed is an overt fat because fat provides 70-75% of its total calories
